[nmglug] Requesting help for making a custom Ubuntu live CD

Hello!
Is there someone on this list who lives in Santa Fe who'd be willing to help me make a custom ubuntu live CD?
I've had some great phone advice from Geoff Chesshire (thanks Geoff!) but I don't want to ask Geoff to have to drive to Santa Fe to help me, especially since it might take me a couple of tries to get right, and I might need help adjusting the CD in the future.
My need is pretty simple. I want help making a live-bootable Ubuntu CD which:
1) Will be widely compatible as a boot CD for Macs & PCs
2) Is seriously locked down re: internet access/security. Needs to work well when completely offline. Geoff pointed out that the latest versions of Ubuntu send search queries to Amazon etc. Can't have that, so an older ubuntu is probably better.
All someone needs to be able to do with this boot CD is boot it up, which auto-launches a locally-stored HTML file, and then have a reasonable expectation of being able to use the browser's built-in printing functionality without having to monkey around with downloading printer drivers if at all possible.
For context, what I'm after is making a CD whose sole purpose is the *offline* execution of the HTML/javascript generator linked from my project here:

There's massive (and justified) amounts of paranoia around making bitcoin wallets, from concerns about trojans and viruses to embedded systems hacks (e.g. viruses that hijack printer firmware.) All very cloak and dagger-ish.
I can compensate you for your time with a very durable tamper-evident paper bitcoin wallet and a token amount of bitcoin in it, say USD$100 worth?
