Yeah: last fall Debian unstable moved to gnome3.  I fought tooth and
nail, then I spent some time with xfce, then with lxwhatever and kde,
and in the end I just decided to work with the new gnome.  They will
gradually re-integrate a lot of configurability.  In the end you have to
move with things or go back to a pre-desktop approach (which is fine)
and just run a window manager and separate decoration/dock components.

Vis-a-vis your apt-get, it looks to me like you want to do exactly that.
